  •  14 whole Raffaello truffles

Instructions

 Freeze the Truffles and Prep: Place your whole Raffaello truffles in the freezer for 30 minutes to an hour before you begin stuffing the cookies. This prevents them from melting away completely while baking. Preheat your oven to 375°F (190°C) and line two large baking sheets with heavy-duty parchment paper.

 Cream Butter and Sugars: In a stand mixer fitted with the paddle attachment, beat the cold cubed unsalted butter, light brown sugar, and granulated sugar on medium-high speed for 3 to 4 minutes. The mixture should look thoroughly incorporated and slightly creamed, but remain cool due to the cold butter.

 Incorporate Liquids and Flavoring: Turn the mixer down to low and add the room-temperature whole eggs, egg yolks, vanilla extract, and extra-strength coconut extract. Mix until the liquid components are completely smoothed out.

 Build the Dry Mix: Gradually add the all-purpose flour, cornstarch, baking powder, baking soda, and salt. Mix on low speed just until a firm, cohesive cookie dough forms. Avoid over-mixing once the flour is added.

 Bake to Golden Perfection: Space the cookie balls at least 2 inches apart on the parchment-lined baking sheets. Bake at 375°F (190°C) for 9 1/2 to 11 minutes. The edges will look beautifully light golden brown, but the centers should still look soft.

 The Garnish Finish: Let the cookies cool on the baking sheet for 10 minutes until they are sturdy enough to handle. Set up a plate with your shredded coconut flakes and melt your dipping white chocolate in a bowl until perfectly silky smooth. Take each cookie, dip the entire top surface into the melted white chocolate, and immediately press it gently into the shredded coconut flakes to secure an even coat.
