Ingredients
The Pistachio Dough
- 1 cup + 1 tbsp (241g) Unsalted Butter, cold and cubed
- 1 cup (200g) Light Brown Sugar, packed
- 1/2 cup (100g) Granulated Sugar
- 2 Large Eggs, room temperature
- 2 Large Egg Yolks, room temperature
- 1 tsp (5ml) Lorann Pistachio Extract (Extra strength)
- 2 tsp (10ml) Pure Vanilla Extract
- 4 cups (500g) All-Purpose Flour
- 1 tbsp (8g) Cornstarch
- 1 tsp (5g) Baking Powder
- 1 tsp (5g) Baking Soda
- 1 tsp (6g) Salt
- 1 2/3 cups (285g) White Chocolate Chips
- 1/2 cup (60g) Roasted Pistachios, chopped
- 2/3 cup (60g) Sweetened Coconut Flakes
The Filling & Topping
- 14-16 Ferrero Raffaello Almond Coconut Treats (one per cookie)
- 1 cup White Chocolate Melts (for dipping)
- Extra Shredded Coconut and Crushed Pistachios for garnish
Instructions
1. Cream the Base
In a stand mixer, cream the cold, cubed butter with both the brown and granulated sugars until smooth. Because the butter is cold, this may take 3–5 minutes.
2. Add the Flavor and Color
Incorporate the eggs, pistachio flavor, and a drop(s) of green food coloring. Mix until the dough is a uniform, vibrant pistachio green.
3. Mix in Dry Ingredients
Fold in the flour, cornstarch, baking soda, and salt. Once the dough begins to form, add the white chocolate chips, chopped pistachios, and shredded coconut. Mix until the “extra” ingredients are evenly distributed.
4. Stuff the Cookies
Measure out large portions of dough (approx. 4oz each). Flatten the dough in your hand and place a single Raffaello truffle in the center. Wrap the dough tightly around the truffle, ensuring it is completely sealed so the center stays creamy.
5. Bake
Preheat your oven to 375°F. Place the dough balls on a parchment-lined baking sheet and bake for 10–12 minutes. The edges should be set, but the tops should remain soft. Let them cool completely before decorating.
6. Decorate
Melt your white chocolate dip. Dip the top of each cooled cookie into the chocolate. While the chocolate is still wet, sprinkle generously with shredded coconut and crushed pistachios.
