- 1 3/4 cup all-purpose flour, (3/4 cup for Lemon, 1 cup for strawberry) (90g)
- 2 tbsp granulated sugar, divided (12g)
- 1 box (family size) instant vanilla pudding mix
- 1 box (family size) instant strawberry Jell-O powder mix
- 1 tsp lemon extract (5mL)
- Yellow gel food coloring (2-3 drops)
For the Soft Lemon Cookies:
- 1 cup unsalted butter, room temperature (225g)
- 1 1/4 cups light brown sugar (250g)
- 1/2 cup granulated white sugar (100g)
- 2 large eggs, room temperature
- 1 tsp vanilla extract (5mL)
- 1 tsp lemon extract (5mL)
- 3 1/4 cups all-purpose flour (390g)
- 2 tsp cornstarch (6g)
- 1 tsp baking soda (5g)
- 1 tsp baking powder (4g)
- 1/2 tsp salt (3g)
- Yellow gel food coloring (2-3 drops)
For the Strawberry Buttercream Dip:
- 1 cup unsalted butter, softened well (225g)
